Cooking Classes at Eden West

The other day I found myself at Eden West in downtown Port Moody, on the hunt for a cherry pitter. Because it is cherry season, and I love cherries, but pits are the pits. Plus, my toddler swallowed a couple, and apparently they are mildly toxic. Luckily, the source who’d sent me to Eden West was on her game, and I found my pitter. It works like a charm, I am happy to say.

Eden West was founded by Tracey Bates and opened its doors for business in May 2006. The store offers a wide variety of specialty foods, cookware and tools. Like cherry pitters. Tracey loves to entertain, loves great food and loves wine. And so she opened Eden West, where you can find all those things. Plus, they also offer cooking classes for all ages.

Their adult classes run from 6-9pm. They include several courses, and they are often paired with specially selected wines. Plus, you get to take all the recipes home and wow your friends. Here’s what they have going for August:

Rip Roarin’ Grilling Cowboy BBQ – Tuesday, August 10 – Chef Glenys Morgan
Glenys Morgan rips up the grill with a menu that is perfect for a crowd. A camp fire, spit or grill in the back yard, whatever you got, this menu will work for all, and is even better with Tracey’s Beergaritas:

  • Chile Cheese Flatbreads
  • Cast Iron Grilled Clams with Aioli
  • Charro Beans with Local Lager
  • Prime Rib Roast with the Ribs on the side
  • Herb Grilled Corn

Gearing up the Grill – Friday, August 13 – Rockin Ronnie Shewchuk, BBQ Champion
Barbecue evangelist Rockin’ Ronnie Shewchuk is back by popular demand and will demonstrate some of his his favorite recipes from his latest bestselling cookbook, Barbecue Secrets DELUXE!, paired with a selection of delicious wines and peppered with lots of great grilling tips and techniques. Space in this special cooking class is limited, and Ronnie’s events sell out fast. Check out this mouth-watering menu:

Greek Fest – Wednesday, August 18 – Chef Alan Dee, the Invisible Chef
Chef Alan Dee demonstrates authentic dishes from this wonderful country of white-washed houses and blue sea. Greek cuisine is pure, simple and seasonal – olive oil , grilled meats, seafood, oregano and sweet pastries are important parts of this cuisine. Chef Alan will show us how to use these ingredients to make outstanding Greek dishes at home:

  • Saganaki – the delicious appetizer of pan-seared cheese
  • Chicken Souvlaki – everyone’s favorite
  • Lemon Roasted Potatoes
  • Spanokopita
  • Bakalava

Bordeaux – French Series – Wednesday, August 35 – Chef Robert Vaillancourt
Bordeaux produces some of the world’s most famous and sought after wines and we will explore it’s cuisine. Chef Robert will transport us to the region and teach us what makes the dishes of this famous wine region unique and show us how to used typical ingredients from the area. Bordelaise sauce…Armagnac…get swept away to France! On the menu:

  • Red Snapper in White Bordeaux Sauce
  • Sun Dried Tomato and Pine Nut Chicken Breasts
  • Petit Pois à la Française – fresh side dish of peas, onion and lettuces
  • Tournedos Bordelaise – Medallions of Beef Tenderloin flambé with Armagnac and served with the traditional Bordelaise sauce
  • Armagnac Creme Anglaise with berries

Wine Country Cuisine – Friday, August 27 – Chef Chris Beall
Wine country cuisine is stylish, sophisticated and full of fresh ingredients and flavours. Join Chris Beall as he creates dishes that celebrate wine country that we are so lucky to have right at our backdoor. Chef Chris will show us how to create each delicious dish at home in our own kitchen plus Eden West owner, Tracey, will pair each dish with a matching wine. Four wine country inspired dishes, 4 wines:

  • California Shrimp Cocktail – Sauvignon Blanc
  • Caramelized Pecan and Pear Salad with Blue Cheese -Riesling
  • Fontina and Proscuitto Stuffed Chicken Breast – Cabernet – Merlot
  • Whiskey Grilled Back Ribs – Zinfandel

Wilton Cake Decorating – Course 1 – Wilton Instructor Holly Alain
4 classes, Mondays – August 9-20, 7-9pm
Discover Cake Decorating with the proven Wilton Method of Cake Decorating! Course 1 will give you all the basics you will need to begin creating fantastic cakes. In this course you will learn, how to fill and frost a cake, tricks for using cake decorating tools, buttercream, borders, writing, flat icing, sweet peas, the Wilton rose, the new Wilton ribbon rose, and dimentional decorating.

Wilton Cake Decorating – Course 2 – Wilton Instructor Holly Alain
4 classes, Saturdays – August 7-28
In Flowers and Cake Design, you’ll explore sophisticated ways to bring your cakes and desserts to life! Your Wilton Method Instructor will teach you to create breathtaking icing flowers such as pansies, lilies and the famous Wilton Rose. Then, you’ll discover the secrets of arranging them in a beautifully balanced cake-top bouquet. You will also learn to make royal icing, gum paste and fondant 101, basket weave technique, plus more.

There are also classes for children. Here’s what’s happening this month:

3 Day Kids Culinary Camp (ages 6 -12) – August 9-11 from 10am-12:30pm
In this hands-on camp, kids will learn fundamental cooking and baking techniques, how to follow a recipe plus kitchen and food safety. Participants will work with other junior chefs as they create fun and easy recipes that are sure to be a hit with the family. Of course, participants will get to enjoy all of their creations along the way.

Day 1: All about Breakfast – Strawberry Delight Smoothies, Banana Pancakes with Cinnamon Syrup, Blueberry Streusel Muffins & Fruit Kabobs with a Honeyed Yogurt Dip
Day 2: Baking up a Storm – S’More Dessert Bars, Pizza Bread, Ultimate Triple Chocolate Chip Cookies and Individual Apple Crumbles
Day 3: Snack Attack – Wrap and Roll Veggie Pinwheels, Fresh Fruit Sundaes, Anytime Mini Pizzas, Super Snack Mix (no nuts)

Cupcake Creations (ages 6 – 12) – Monday, August 16 from 10am-12:30pm
Everybody loves Cupcakes! Join us for a baking class that is all about cupcakes. Participants will get creative while learning classic cupcakes recipes, yummy frosting and decorating techniques. They will also get to take home a Cake Decorating Bag and Cupcake Decorating Tip.

If you have any questions, or would like to register for a class, you can call Eden West at 604.939.6200. Or drop by the store at 2500 St. Johns Street. But take a tip from me if you do – don’t bring your 2-year-old. I would have enjoyed my visit far more if I could have spent more time browsing, and less time making sure my toddler didn’t destroy the lovely, lovely cookware.

  1. I love Eden West! (OK, disclaimer…my mom also works there. But I loved it before too!) I have taken the cake decorating classes, and they are fantastic – I am so much more confident in decorating cakes for my kids’ birthdays. Last weekend we celebrated my son’s birthday and baptism (long story why they were together), and I managed to home-bake and decorate two cakes for the occasion. I never would have been able to do that before! The store itself is fantastic. My daughter (aged 6) has also taken some of the kids classes – the cupcake and snack ones – and loved them.
